Juice Pulp Pancakes

I love fresh juice, but I hate the waste that's left behind! This simple recipe is a great way to use it and get the benefits of all that goodness and fibre.

If you suffer from constipation like I often do, pear, celery and ginger juice is a great way to get things moving. I make this in my Thermomix - just whiz it up then push through a strainer. You will get some of the pulp doing this but it's still good to drink.

For the juice you'll need:

  • 2 stalks celery
  • 1 large pear
  • 1 inch of peeled ginger

This makes enough for one glass of juice. 

Then to make pancakes you'll need:

  • 2 organic eggs
  • 1 tablespoon coconut flour
  • 1 teaspoon cinnamon
  • About a cup of juice pulp (reasonably dry)

Mix it all together then fry in a generous amount of coconut oil. Top with coconut yoghurt, strawberries and extra cinnamon.
