Meet the Tolson fam behind White Prince Mushrooms!

This fourth-generation Aussie farming family has been growing top-quality produce for over 50 years, with a deep passion for doing things right, from the compost all the way to your plate. With roots in the Hawkesbury region of NSW, the Tolson family has been a proud part of the mushroom industry for decades. They’ve poured their heart, soul, and plenty of smarts into growing delicious, spray-free mushrooms that are full of flavour and goodness. Here's a peek into their story...


Can you tell us a bit about your business? How did you get started?

White Prince Mushrooms is part of a long-standing family tradition. It all began back in the 1950s when Bert Tolson started growing asparagus - at the time, he was the only asparagus grower at the Sydney markets! Fast forward a few decades, and the Tolson family has become a powerhouse in the mushroom world. With over 200 years of combined experience across the team, growing top-notch produce is in their DNA.

We’re still proudly 100% Australian and family-owned, and now our focus is firmly on mushrooms - growing them, refining the process, and making sure they’re the absolute best they can be.

How do you grow your mushrooms? What’s your process like?

Mushroom growing is a fine art, and it’s something we’ve been refining for generations. From creating the perfect compost to managing every stage of the growing process, we’re hands-on all the way. We travel the world to stay ahead of the game and make sure we’re using the best technology and methods available.

Everything is vertically integrated, which means we manage the process from start to finish. That includes growing, harvesting, packaging, and distributing. It helps us maintain quality and consistency in every mushroom we produce.

What do you love about your work?

There’s something incredibly rewarding about growing food that people love. Mushrooms are such a versatile ingredient. They can be the star of a dish or a subtle flavour booster, and we love seeing them used in creative ways. 

If you could only eat one meal for the rest of your life, what would it be?

That’s a tough one, but you can’t go wrong with steak and mushrooms.
