White Prince Mushrooms is a proudly Australian, family-owned business run by the Tolson family, a fourth-generation farming family with deep roots in the Hawkesbury region of NSW. Their farming story stretches back to the 1950s, when Bert Tolson was growing asparagus and famously became the only asparagus grower at the Sydney markets. Over the decades, that passion for growing exceptional produce evolved into a strong focus on mushrooms, and today the Tolson family brings more than 200 years of combined experience to their craft.

From Compost to Plate

Mushroom growing at White Prince is treated as both a science and an art. The team is hands-on at every stage, from creating the perfect compost right through to harvesting, packaging and distribution. Their operation is fully vertically integrated, allowing them to maintain strict quality control and consistency. They also travel internationally to stay up to date with the latest technology and best practices, constantly refining their methods to grow flavour-packed, spray-free mushrooms they’re truly proud of.
