Abby's Gluten Free Banana Bread Recipe

This is my new go to recipe when it comes to making banana bread. Abby who has just recently joined the team brought this in for us and it was a hit with everyone who had the pleasure of trying it.

Abby has been cleverly adjusting the ingredients and has perfected this one herself which I can definitely vouch for.

Abby's Gluten Free Banana Bread Recipe

4 Ripe Bananas
2-3 tablespoons of Coconut Sugar
2-3 tablespoons of Maple Syrup
1/2 cup melted Coconut Oil
1/2 cup Almond Flour/Meal
1 cup Cassava Flour
1 teaspoon of Vanilla Essence
1 teaspoon of Cinnamon
1 teaspoon Baking Soda (aka Bicarb Soda)
1/2 tsp Sea salt
2 Eggs

1. Mash bananas, mix in melted coconut oil until combined.
2. Mix in egg, coconut sugar, maple syrup and vanilla.
3. Sift in remaining ingredients, Stir until just combined.
4. Put in a lined loaf tin and bake for 40-50 min at 180 degrees. 

This banana bread is lighter/fluffier than what you might be familiar with because of the Cassava Flour and I think is what makes it extra delicious.
