This easy and amazing slice is one Kristen made with her girls last weekend. As Kristen is not for specific recipes I have tried my best to convert it into the below recipe for you to hopefully make and enjoy too; 

Kristen's Healthy Chocolate and Peanut Butter Slice Recipe

Ingredients:


Slice Base Ingredients:
2 tablespoons of Peanut Butter
4 tablespoons of Coconut Oil 
1/2 tablespoon Honey
1 cup Almond Meal
1/2 cup Desiccated Coconut
1 cup Rolled Oats
1/2 cup Chopped Nuts
1/2 cup Puffed Rice
1/4 cup Healthy Chocolate Chips (I use Temptress Apothecary's)

Chocolate Topping Ingredients:
1 tablespoon Powdered Cacao
Small handful Cacao Butter Buttons
2-3 tablespoons Coconut Oil
1/2 tablespoon honey 

Method:

Slice Base Method:

In a small saucepan melt Peanut Butter, Coconut Oil and Honey over a low-medium heat and mix till combined.

In a bowl mix Almond Meal, Desiccated Coconut, Rolled Oats, Chopped Nuts, Puffed Rice, Healthy Chocolate Chips. 

Pour the melted ingredients into the bowl with dry ingredients and mix together till combined. You need enough liquid to coat the dry ingredients and be able to press into a pan (but it shouldn't be too wet). Once you've reached this consistency by potentially adding a touch more dry/wet ingredients, press into lined slice tray bake for 20 mins at 180 degrees for 30 minutes.

Whilst allowing base to cool, make chocolate topping.

Chocolate Topping Method:

Melt Cacao Powder, Cacao Butter, Coconut Oil and Honey in a saucepan over a low-medium heat till combined.

Pour over the top of cooled slice base. Pop it in the fridge to set the chocolate layer.

However if your impatient like me when it comes to eating delicious food you just made, pop it in the freezer so it sets in half the time.

Most of all enjoy the process of making this amazing slice as much as you'll enjoy eating it.
