Homemade Beef Burger Bowls with Delicious Beet Relish – the most nutritious way to eat a burger!

Who doesn't love a good burger? But let's be honest, they're not usually very healthy, especially not the ones you’ll find at a certain fast-food chain… This clever recipe has all the flavour with none of the nasties - just good quality fresh organic ingredients that will leave you feeling nourished and fabulous!

Sure to please the whole family, you can whip this dish up in around 45 mins with minimal effort.

Instructions:

Chips: Peel and cut potatoes into chips, toss in a bowl with olive oil and a pinch of salt. Place onto a lined baking tray and bake in the oven for 20-25 mins, until golden.

Relish: Heat 1 tbsp olive oil in a frying pan over medium heat. Add half the onion, cook until softened. Add beetroot, apple and cumin, sauté for 2- 3 minutes to soften. Add apple cider vinegar and honey and cook until liquid is reduced and relish is soft. Add a dash of water if needed to continue cooking. Allow to cool.

Onion: Heat olive oil in a frying pan, add remaining onion and cook over medium heat for 5 minutes, stirring regularly to soften and caramelise. Set aside.

Patties: Next make the patties. In a bowl add beef mince, egg, garlic, paprika, salt and pepper. Combine and shape into patties.

Add additional olive oil to frying pan and heat to medium. Cook patties on each side for 4-5 minutes or until cooked through.

Assemble burger bowls with lettuce, tomato, beef patties, caramelised onion and relish. Serve with chips on the side. Add avocado and your favourite sauce if desired.
