Roast it âtil caramelised and tender, or slice it thin and toss it in a citrusy salad with orange segments. Itâs fresh, fragrant and very fancy-feeling for such a humble bulb. âš

These little green powerhouses are protein-packed and perfect right now. Pop them from their pods, blanch âem, peel off their coats and toss with olive oil, lemon juice and a sprinkle of salt. Simple, nourishing, and a springtime staple.
