🛒 Ingredients (Serves 4)

  • 30g garlic cloves, minced
  • 1 brown onion, diced
  • 2 celery stalks, diced
  • 1kg pumpkin, peeled & chopped
  • 500g potatoes, peeled & chopped
  • 500g beef mince
  • 1 cup frozen Spring Harvest Vegetables
  • 400g tinned lentils, drained
  • 400g tinned tomatoes

Pantry staples (not included in recipe kit):

  • 2 tbsp tomato paste
  • 2 tbsp tamari
  • Olive oil
  • Salt & pepper

To make the meal go further, add extra frozen veg to the filling and serve with crusty sourdough.

🍽 Instructions

  1. Make the mash: Place pumpkin and potatoes in a large saucepan. Cover with water and boil for 15–20 minutes or until soft. Drain and mash with a drizzle of olive oil, salt and pepper. Set aside.
  2. Cook the filling: Heat olive oil in a large pot. Sauté onion, garlic, and celery for about 5 minutes or until softened.
  3. Add the beef mince and cook until browned. Stir in tomato paste, tamari, and tomatoes. Add lentils and frozen vegetables. Simmer for 10–15 minutes until the mixture thickens slightly. Season to taste.
  4. Preheat oven to 180°C. Spoon the mince and veggie filling into a baking dish. Top evenly with mashed veggies. Use a fork to create texture on top.
  5. Bake for 20–25 minutes until golden and bubbling at the edges.
