🛒 Ingredients (Serves 3–4)

850g chicken drumsticks

400g chickpeas (or lentils), rinsed and drained

1 sweet potato, cut into 1cm rounds

1 head broccoli, cut into florets

200g cherry tomatoes
-
1 long red chilli, finely chopped

1 avocado, sliced
-
1 lime, zest and juice
Pantry staples (not included in the recipe kit):

2 tbsp maple syrup

Salt & pepper

Fresh coriander (optional)

🍽 Instructions

Preheat oven to 180°C. Line a large baking tray with baking paper.

Add sweet potato slices to tray. Drizzle with maple syrup and 1 tbsp olive oil, season with salt and pepper. Bake for 15 minutes.

While baking, combine the zest and juice of ½ a lime, chopped chilli, 1 tbsp olive oil, and a pinch of salt and pepper in a bowl. Add chicken and toss to coat.

After 15 minutes, move sweet potato to the sides of the tray. Add chicken, pouring over any marinade. Scatter broccoli, cherry tomatoes, and chickpeas around the chicken. Drizzle with another tbsp of olive oil.

Bake for 20 more minutes or until chicken is fully cooked and vegetables are tender.
- To serve, add sliced avocado, squeeze over fresh lime juice, and sprinkle with coriander if desired.
