🛒 Ingredients (Serves 3–4)

  • 400g gluten-free gnocchi
  • 1kg pumpkin, cut into cubes
  • 30g garlic cloves, peeled
  • 1 green capsicum, chopped
  • 1 zucchini, chopped
  • 200g cherry tomatoes

Pantry staples (not included in recipe kit):

  • Olive oil
  • Salt & pepper
  • Italian dried herbs
  • Fresh basil (optional)
  • Parmesan cheese (optional)

🍽 Instructions

  1. Preheat oven to 180°C.
  2. Line a large rimmed baking tray with baking paper. Spread over the pumpkin and garlic cloves.
  3. Drizzle with olive oil, season with salt and pepper, and bake for 15 minutes.
  4. Add capsicum, zucchini, gnocchi, and cherry tomatoes to the tray. Sprinkle with dried herbs and drizzle generously with olive oil.
  5. Bake for a further 20 minutes or until vegetables are tender and gnocchi is lightly crisped.
  6. Optional: Grate over parmesan and garnish with fresh basil before serving.
