🛒 Ingredients (Serves 4)

For the Fritters:

  • 200g haloumi, grated
  • 2 zucchinis, grated and excess juice squeezed out
  • 1 carrot, finely grated
  • Corn kernels, drained
  • 2 eschallots, finely chopped
  • 3 eggs*
  • 4 tbsp flour of choice*
  • Pinch of cracked black pepper
  • Olive oil* (for frying)

For the Salad:

  • Lettuce
  • 2 tomatoes, diced
  • 1 cucumber, sliced 
  • Salad dressing of choice or a simple olive oil + lemon juice mix* 

Optional:

  • Avacado

🍽 Instructions

  1. In a large mixing bowl, whisk the eggs. Add grated haloumi, zucchini, carrot, corn, and eschallots. Stir well to combine.
  2. Add flour and cracked pepper to the mixture. Mix thoroughly to form a batter.
  3. Heat olive oil in a frying pan over medium heat. Spoon batter into the pan to form fritters. Cook for 4–5 minutes on each side, or until golden and cooked through. Drain on paper towel.
  4. While fritters are cooking, prepare the salad: toss together lettuce, tomato, and cucumber. Dress with your favourite dressing or a simple olive oil and lemon combo.
  5. (Optional) In a small bowl, mash avocado with a squeeze of lemon juice, salt, and pepper.
  6. Serve fritters hot with fresh salad and a generous spoonful of smashed avo on the side.
