650g chicken breast

1 pkt Japanese Curry Recipe Base

2 potatoes, peeled and cubed

2 brown onions, finely chopped

2 carrots, peeled and diced

1 zucchini, chopped

2 spring onions, finely chopped

400ml chicken stock or broth

2 cups panko breadcrumbs or gluten-free alternative

Heat olive oil in a large pot and cook onions, carrots, and potatoes for 5–6 minutes over medium heat.

Add Japanese Curry sachet and stir. Mix in tomato paste and stock. Cover with a lid and simmer for 15 minutes or until vegetables are tender. Season to taste.

Meanwhile, cook rice according to packet instructions and set aside.

While curry is simmering, slice each chicken breast lengthways.

In one bowl, whisk eggs. In another, mix panko crumbs (or GF alternative) with sea salt.
