🛒 Ingredients (Serves 4)

  • 500g beef or pork mince
  • 1 packet taco seasoning
  • 1 capsicum, chopped
  • Corn, blanched and kernels removed
  • 400g mixed beans
  • 400g chopped tomatoes
  • 1 avocado
  • 1 lemon or lime, juiced

Pantry staples (not included in recipe kit):

  • Olive oil
  • Shredded cheese
  • Salt and pepper
  • Sour cream (optional)
  • Fresh coriander (optional)

For dairy free, simply omit cheese and sour cream.

🍽 Instructions

  1. In a large frying pan, heat olive oil. Add mince and cook over medium heat, stirring to break up.
  2. Add taco seasoning and capsicum. Stir through.
  3. Add mixed beans and stir through.
  4. Spread tortilla chips over an ovenproof tray or large baking dish.
  5. Spread mince and bean mixture over chips. Add tomatoes and corn. Sprinkle generously with shredded cheese.
  6. Bake in oven until cheese has melted (around 5 minutes).
  7. Mash avocado in a bowl with lemon/lime juice and a pinch of salt and pepper.
  8. Serve nachos topped with mashed avocado, and optionally, sour cream and fresh coriander.
