500g beef or pork mince

1 packet taco seasoning

1 capsicum, chopped

Corn, blanched and kernels removed

400g mixed beans

400g chopped tomatoes

1 avocado

1 lemon or lime, juiced

For dairy free, simply omit cheese and sour cream.
🍽 Instructions

In a large frying pan, heat olive oil. Add mince and cook over medium heat, stirring to break up.

Add taco seasoning and capsicum. Stir through.

Spread tortilla chips over an ovenproof tray or large baking dish.
