🛒 Ingredients (Serves 4)

1 brown onion, chopped

2 cloves garlic, finely chopped

2cm ginger, grated
-
1.5kg Jap pumpkin, peeled and chopped

400g lentils, drained and rinsed

200ml coconut milk

🍲 Instructions

Heat a large pot to medium heat.

Add olive oil, onion, garlic and ginger. Sauté until softened.

Add broth and cook, covered, over medium heat until pumpkin is tender.

Add lentils and coconut milk and allow to cook through.

Turn off heat and blend/purée until smooth.

Serve soup hot with pan-fried bacon pieces, a dollop of Greek yoghurt and/or garnish with fresh coriander.
