🛒 Ingredients (Serves 4)

  • 1 brown onion, chopped
  • 2 cloves garlic, finely chopped
  • 2cm ginger, grated
  • 1.5kg Jap pumpkin, peeled and chopped
  • 400g lentils, drained and rinsed
  • 200ml coconut milk 

Pantry staples (not included in recipe kit):

  • Olive oil
  • Broth or stoc
  • Salt & pepper
  • Greek yoghurt (or dairy-free alternative) – optional
  • Bacon – optional
  • Fresh coriander – optional

🍲 Instructions

  1. Heat a large pot to medium heat.
  2. Add olive oil, onion, garlic and ginger. Sauté until softened.
  3. Add broth and cook, covered, over medium heat until pumpkin is tender.
  4. Add lentils and coconut milk and allow to cook through.
  5. Turn off heat and blend/purée until smooth.
  6. Serve soup hot with pan-fried bacon pieces, a dollop of Greek yoghurt and/or garnish with fresh coriander.
  7. Season with salt and pepper to taste. 

💡 Tips & Variations

  • Make it vegan: Skip the bacon and use a plant-based yoghurt
  • Don’t have a blender? Use a stick blender or mash for a rustic texture
  • Boost the gut health: Add a swirl of probiotic-rich coconut yoghurt
