🛒 Ingredients (Serves 4)

  • 200g rice paper wrappers
  • 1 packet Satay Seasoning Mix
  • 1 block tofu, cut into ½ cm strips
  • 1 can coconut milk
  • 3 carrots, julienned
  • 2 cucumbers, cut into strips
  • ¼ red cabbage, finely shredded
  • 1 small bunch coriander

Pantry staples (not included in recipe kit):

  • 2 tbsp olive oil
  • ¼ cup peanut butter
  • 4 tbsp tamari or soy sauce
  • 1 tbsp honey
  • 1 tbsp lemon or lime juice 

🍽 Instructions

  1. Press tofu with paper towel to remove excess moisture.
  2. To a small bowl add tofu strips, 2 tbsp tamari, 1 tbsp olive oil and half the Satay Seasoning. Mix to coat. Allow to marinate.
  3. To a small mixing bowl, add peanut butter, 2 tbsp tamari, honey, coconut milk, lemon juice, and 1 tbsp of Mingle Seasoning. Warm over medium heat and whisk to combine.
  4. In a frying pan over medium heat, add remaining olive oil and cook tofu strips for 1 minute each side or until golden. Set aside.
  5. Dip each rice paper into hot water to soften and place onto a flat surface. Fill the centre with carrot, cucumber, red cabbage, coriander and tofu. Roll to enclose fillings.
  6. Serve with satay dipping sauce.
