🛒 Ingredients (Serves 4)

  • 400g gluten-free pasta spirals
  • ½ bunch basil
  • 300g broccoli, chopped into florets
  • 2 cloves garlic, peeled
  • ½ cup cashews
  • 2 lemons

Pantry staples (not included in recipe kit):

  • Olive oil
  • Sea salt
  • Parmesan (optional)
  • Chicken breast (optional)
  • Bacon (optional) 

🍽 Instructions

  1. In a food processor, add basil, ⅓ cup cashews, garlic, juice of 1 lemon, olive oil and sea salt. Blend until combined and smooth. Add additional olive oil if needed.
  2. In a saucepan, blanch broccoli florets until just tender. Drain, set aside.
  3. Cook pasta to packet instructions. Drain.
  4. In a large bowl, add cooked pasta and pesto. Mix to coat pasta well. Stir through broccoli.
  5. Top with remaining cashews.
  6. For additional protein, stir through cooked and sliced chicken or cooked and chopped bacon. 

💡 Tips & Optional Add-Ins

  • Make it nut-free: Swap cashews for sunflower seeds
  • Want it extra creamy? Add a spoonful of dairy-free yoghurt or avocado to your pesto
