🛒 Ingredients (Serves 4)

400g gluten-free pasta spirals

½ bunch basil
-
300g broccoli, chopped into florets

2 cloves garlic, peeled
-
½ cup cashews
-
2 lemons
Pantry staples (not included in recipe kit):

Sea salt

Parmesan (optional)

Chicken breast (optional)

🍽 Instructions

In a food processor, add basil, ⅓ cup cashews, garlic, juice of 1 lemon, olive oil and sea salt. Blend until combined and smooth. Add additional olive oil if needed.

In a saucepan, blanch broccoli florets until just tender. Drain, set aside.

Cook pasta to packet instructions. Drain.

In a large bowl, add cooked pasta and pesto. Mix to coat pasta well. Stir through broccoli.

Top with remaining cashews.
