🛒 Ingredients (Serves 3–4)

  • 2 garlic cloves, minced
  • 3cm piece of ginger, minced
  • 500g pork mince
  • 2 baby cos lettuce
  • 2 stalks eschallots, thinly sliced
  • 1 lemon
  • 1 large carrot, shredded

Pantry staples (not included in recipe kit):

  • 1 tbsp olive oil
  • 1 tbsp tamari or soy sauce
  • 1 tbsp oyster sauce or coconut aminos (optional)
  • Fresh coriander (optional)
  • Crushed peanuts (optional)
  • Vermicelli rice noodles or bean sprouts (optional for stretching) 

🍽 Instructions

  1. In a frying pan or wok, heat olive oil. Add garlic, ginger and pork mince. Stir regularly over medium heat until mince is cooked through.
  2. Add tamari, oyster sauce (if using), half the lemon (juiced), and eschallots. Stir to combine.
  3. Separate lettuce leaves, keeping whole leaves intact and gently wash.
  4. Add shredded carrot to lettuce leaves and fill with mince mixture.
  5. Garnish with coriander and crushed peanuts (if using). Squeeze over remaining lemon. 

🔄 Optional Add-Ons & Tips

  • Make it go further: Stir through cooked vermicelli noodles or bean sprouts
  • Vegetarian version: Use crumbled tofu or plant-based mince
  • Add spice: A dash of chilli or sriracha works beautifully
  • No cos lettuce? Use iceberg or butter lettuce for a similar crunch
