🛒 Ingredients (Serves 3–4)

  • 650g chicken breast, diced into 2cm pieces
  • 1 packet Mingle Satay Mix
  • 2cm ginger, minced
  • 1 brown onion, finely diced
  • 200g green beans, trimmed
  • 1 capsicum, sliced
  • 1 cucumber, sliced
  • 400ml coconut milk
  • 1 lemon

Pantry staples (not included in recipe kit):

  • ⅓ cup peanut butter
  • Coconut oil (or olive oil)
  • 2 tbsp tamari (or soy sauce)
  • 1 cup rice
  • Coriander (optional)
  • Peanuts (optional)

🍽 Instructions

  1. Add oil to a deep pan or wok and heat to medium.
  2. Add onion, chicken, ginger and satay mix. Sauté until chicken is browned.
  3. Stir through peanut butter.
  4. Add a squeeze of lemon juice, tamari and coconut milk and mix.
  5. Add beans and capsicum and cook through.
  6. For a thicker sauce, cook for longer. For a thinner sauce, add additional coconut milk.
  7. Meanwhile, cook rice according to packet instructions.
  8. Serve over cooked rice. Finish with fresh coriander, chopped peanuts and sliced cucumber. 

💡 Tips & Add-Ons

  • Nut-free option: Use sunflower seed butter instead of peanut butter
  • More greens? Add broccoli or bok choy in the final minutes of cooking
  • Spicy upgrade: Add fresh chilli or chilli flakes with the ginger
