🛒 Ingredients (Serves 3–4)

5–6 organic sausages

3 Sebago potatoes, peeled and cut into cubes

250g cherry tomatoes

2 garlic cloves
-
1 red onion, cut into quarters
Parsley Dressing:

1 long red chilli

1 lemon

¼ cup olive oil*

🍽 Instructions

Preheat oven to 180°C.

On a large lined baking tray, add sausages, onion and peeled garlic cloves.

In a bowl, toss potato with olive oil to coat. Season with sea salt. Add to baking tray.

Bake in oven for 20 minutes. Add cherry tomatoes and return to oven for a further 10–15 minutes or until sausages are cooked through and potatoes are golden.

Meanwhile, make the dressing. In a small bowl, mix parsley with chilli, lemon juice and olive oil.
- When ready to serve, drizzle dressing over tray bake.
