🛒 Ingredients (Serves 3–4)

  • 5–6 organic sausages
  • 3 Sebago potatoes, peeled and cut into cubes
  • 250g cherry tomatoes
  • 2 garlic cloves
  • 1 red onion, cut into quarters

Parsley Dressing:

  • Parsley
  • 1 long red chilli
  • 1 lemon
  • ¼ cup olive oil*

🍽 Instructions

  1. Preheat oven to 180°C.
  2. On a large lined baking tray, add sausages, onion and peeled garlic cloves.
  3. In a bowl, toss potato with olive oil to coat. Season with sea salt. Add to baking tray.
  4. Bake in oven for 20 minutes. Add cherry tomatoes and return to oven for a further 10–15 minutes or until sausages are cooked through and potatoes are golden.
  5. Meanwhile, make the dressing. In a small bowl, mix parsley with chilli, lemon juice and olive oil.
  6. When ready to serve, drizzle dressing over tray bake.
