🛒 Ingredients (Serves 4)

2 x 185g canned tuna, drained

1kg potatoes, peeled
-
1 sweet corn cob (or use canned)

1 carrot, finely grated
-
¼ bunch dill, chopped
-
1 green apple, julienned
-
¼ cabbage, finely sliced
-
2 eschallots, chopped
-
1 lemon, juiced
Pantry staples (not included in the kit):

1 egg

Olive oil
-
Salt and pepper
Optional: Dust patties in almond meal or gluten-free breadcrumbs for extra crispiness.
🍽 Instructions

Preheat oven to 180°C. Cut half the potatoes into thin chips, toss with olive oil and season. Bake for 20 minutes until golden.

Boil the remaining potatoes until tender. Drain and mash.

Boil the corn, then slice off the kernels.

In a bowl, combine tuna, mashed potato, egg, carrot, corn, dill and half the eschallots. Season well.

Shape the mixture into 8 patties.

Heat olive oil in a frying pan and cook patties for about 4 minutes each side, or until golden.

In a separate bowl, mix cabbage, apple and remaining eschallots. Add 1 tbsp olive oil, lemon juice, and a generous pinch of salt. Toss to coat.
- Serve patties with the crisp slaw and golden potato chips.
