8 large pastured, free-range eggs

½ cup coconut milk

2 eschallots, finely sliced

Asparagus, trimmed

½ cup bacon, diced and sautéed (optional)
Crust

1 cup flour of choice*

½ cup coconut oil*

2 eggs

🍽 Instructions

Preheat oven to 180°C (fan forced).

Make the crust: In a mixing bowl, rub chilled coconut oil into flour until it resembles breadcrumbs. Add eggs and salt, mixing to form a dough. If soft, chill before rolling.

Roll dough between two sheets of baking paper until ½ cm thick.Line an oiled pie dish with pastry, moulding to fit. Prick base with a fork.

Bake crust for 12–15 minutes.

Make the filling: Whisk eggs and coconut milk. Stir in eschallots, salt and pepper. Mix in bacon if using.

Pour filling into baked crust. Lay asparagus spears over the top.
