🛒 Ingredients (Serves 4–6)

Filling

  • 8 large pastured, free-range eggs
  • ½ cup coconut milk
  • 2 eschallots, finely sliced
  • Asparagus, trimmed
  • ½ cup bacon, diced and sautéed (optional)

Crust

  • 1 cup flour of choice*
  • ½ cup coconut oil*
  • 2 eggs
  • Salt*

*Pantry staples not included in meal kit

🍽 Instructions

  1. Preheat oven to 180°C (fan forced).
  2. Make the crust: In a mixing bowl, rub chilled coconut oil into flour until it resembles breadcrumbs. Add eggs and salt, mixing to form a dough. If soft, chill before rolling.
  3. Roll dough between two sheets of baking paper until ½ cm thick.Line an oiled pie dish with pastry, moulding to fit. Prick base with a fork.
  4. Bake crust for 12–15 minutes.
  5. Make the filling: Whisk eggs and coconut milk. Stir in eschallots, salt and pepper. Mix in bacon if using.
  6. Pour filling into baked crust. Lay asparagus spears over the top.
  7. Bake for 30–35 minutes, or until eggs are set and golden on top.
  8. Allow to cool slightly before slicing and serving.
