🛒 Ingredients (Serves 4)

  • 1 brown onion, diced
  • 1 leek (white & light green parts only), sliced
  • 750g potatoes, peeled and chopped
  • 30g garlic, minced
  • 400g canned chickpeas, drained and rinsed

Pantry staples (not included in meal kit):

  • 1 tbsp olive oil
  • 4–5 cups vegetable stock
  • Salt & pepper
  • Optional: Fresh herbs, microgreens, Greek yoghurt

🍽 Instructions

  1. In a large pot, heat olive oil. Add onion, leek and garlic. Sauté for 5–7 minutes until soft and fragrant.
  2. Stir in chopped potatoes and pour in stock. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  3. Add chickpeas and cook for 5 minutes to warm through. Season to taste.
  4. Use a stick blender to puree until smooth and creamy. For texture, blend only half.
  5. Serve hot, topped with cracked pepper, a swirl of yoghurt, and fresh herbs or microgreens.
