🛒 Ingredients (Serves 4)

1 brown onion, diced

1 leek (white & light green parts only), sliced

750g potatoes, peeled and chopped

30g garlic, minced
-
400g canned chickpeas, drained and rinsed
Pantry staples (not included in meal kit):

1 tbsp olive oil

4–5 cups vegetable stock

Salt & pepper

🍽 Instructions

In a large pot, heat olive oil. Add onion, leek and garlic. Sauté for 5–7 minutes until soft and fragrant.

Stir in chopped potatoes and pour in stock. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.

Add chickpeas and cook for 5 minutes to warm through. Season to taste.

Use a stick blender to puree until smooth and creamy. For texture, blend only half.
