🛒 Ingredients (Serves 4)

  • 500g beef mince
  • 1 packet Mingle Taco Seasoning
  • 1 red onion, finely diced
  • 2 tomatoes, chopped
  • 1 baby cos lettuce, shredded
  • 1 tin red kidney beans, drained and rinsed
  • 1 avocado, sliced
  • 1 lemon, juiced
  • OzGanics salsa

Pantry staples (not included in the recipe kit):

  • 1 cup rice
  • Olive oil
  • Optional: Fresh coriander, sour cream, corn

🍽 Instructions

  1. Cook rice according to packet directions.
  2. Heat olive oil in a pan over medium heat. Add half the diced red onion and beef mince. Cook until browned, breaking up the mince as you go.
  3. Add the Mingle Taco Seasoning and stir through. Continue cooking until beef is fully cooked.
  4. Stir in kidney beans and cook until heated through. Set aside.
  5. In a small bowl, mix the chopped tomatoes, remaining red onion, and lemon juice to create a fresh salsa.
  6. Assemble bowls with a base of rice, topped with beef and beans. Section with shredded lettuce, fresh tomato salsa, and avocado.
  7. Drizzle with salsa and finish with optional toppings like sour cream and fresh coriander.
