🛒 Ingredients (Serves 4)

  • 1 brown onion, sliced
  • 2 garlic cloves, minced
  • 1kg pumpkin, diced into 2cm cubes
  • 200g green beans, trimmed
  • 650g chicken breast, diced into 3cm cubes
  • 1 jar Butter Chicken Simmer Sauce

Pantry staples (not included in the recipe kit):

  • Olive oil
  • 1 cup rice of choice
  • Fresh coriander (optional)
  • Greek or coconut yoghurt (optional, for garnish)

🍽 Instructions

  1. Add olive oil to a deep pan and heat to medium.
  2. Add sliced onion and minced garlic. Sauté until softened.
  3. Add diced chicken and cook until lightly browned.
  4. Stir in diced pumpkin and Butter Chicken Simmer Sauce.
  5. Reduce heat and simmer, covered, while cooking rice according to packet directions.
  6. Remove lid and stir in green beans. Cook for a further 5 minutes.
  7. Serve the Butter Chicken over rice. Garnish with yoghurt and fresh coriander if desired.
