🛒 Ingredients (Serves 4)

1 brown onion, chopped

30g garlic, crushed

1 red capsicum, chopped

1 green capsicum, chopped

1 can diced tomatoes

100g baby spinach

6–8 large eggs
Pantry staples (not included in recipe kit):

1 tbsp olive oil

2 tsp paprika

1 tsp cumin

½ tsp ground coriander

Salt and pepper

1 tbsp tomato paste (optional)

🍽 Instructions

In a deep frying pan, heat olive oil over medium heat. Add onions and garlic and sauté for 3–4 minutes until softened.

Add capsicum, tomato paste (if using), paprika, cumin, tomatoes and season with salt and pepper. Sauté for 5–8 minutes, until tomatoes have softened.

Add baby spinach and stir through.

Create 6–8 wells into the tomato base. Crack an egg into each hole. Cover with lid and cook over low-medium heat until egg is cooked to liking.
