🛒 Ingredients (Serves 6)

  • 1kg potatoes, cooked and mashed
  • 1 brown onion, finely chopped
  • 3 stalks celery, finely chopped
  • 500g lamb mince
  • 600g Spring Harvest frozen vegetables 

Pantry staples (not included in recipe kit):

  • Olive oil
  • 3 tbsp tomato paste
  • 1 tbsp flour of choice (use GF flour to make gluten free)
  • 1 tbsp tamari (or Worcestershire sauce)
  • 500ml stock (or broth)
  • Sea salt 

🍲 Instructions

  1. Preheat oven to 200°C.
  2. Heat 1 tbsp olive oil in a saucepan over medium heat. Add onion and celery and cook, stirring for 5 minutes or until softened.
  3. Add lamb mince and break up any lumps. Cook, stirring for 2 minutes.
  4. Add flour and stir to combine. Add tomato paste, tamari and stock. Bring to a boil, add Spring Harvest Vegetables then reduce heat to low.
  5. Cook for 30 minutes, stirring occasionally, until sauce has thickened. Season to liking.
  6. Meanwhile, prepare mashed potatoes.
  7. Spoon lamb mixture into a 2L baking dish. Top with mashed potato. Use a fork to spread evenly. Drizzle lightly / spray with olive oil.
  8. Bake in oven for 20 minutes or until golden on the edges.
